Keto “Food Court” Bourbon Chicken

If you ever went to the food court at the mall, you know EXACTLY what I’m talking about! This easy recipe is a bite of nostalgia!



INGREDIENTS:

Note: this recipe is for 1 lb of chicken. Double or triple the recipe as needed! Most packages of chicken thighs are 2 to 3 pounds.

  • 1 lb - Boneless, skinless Chicken Thighs (If you don’t like dark meat, use chicken tenders instead, but know it won’t be quite as delicious as the original)

  • 2 Tbsp - Sweetener (I use allulose)

  • 2 Tbsp - Sugar-free Ketchup

  • 2 Tbsp - Soy Sauce

  • 1/4 cup - Water

  • 1 shot of Bourbon (optional)

  • 1/4 tsp - Ground Ginger

  • 1/4 tsp - Black Pepper

  • 1 tsp - Paprika

  • 2 tsp - Garlic Powder

  • 1/4 tsp - Sea Salt

  • 1 Tbsp - Avocado Oil



DIRECTIONS:

  1. Prepare your marinade. In a bowl, mix together the sweetener, ketchup, soy sauce, water, bourbon, and spices.

  2. Slice the chicken thighs into 1/2-inch cubes. Then stir them into the marinade. The longer you marinade, the better (Minimum of 15 minutes, up to 5 hours)

  3. In a large non-stick skillet, heat up the avocado oil over medium-high heat. Once hot, add the chicken and all the marinade. Spread the chicken into an even layer, and let simmer. Once the liquid has mostly evaporated, start tossing the chicken in the pan, until its nicely browned. This entire process takes 7-10 minutes, depending on your heat level. You’ll know it’s done when the edges are getting crispy, and the sauce is completely gone and coated the chicken.

Enjoy! You can serve with a low-carb rice of your choice, but personally, I just dig right into it as-is! Styrofoam container optional ;)
