The Best (Simple and Easy!) Ceviche - A Summer Treat

Keto | Paleo | Sugar-free | Gluten-Free

This is the perfect treat to welcome the warm weather. This “vacation in a bowl”, as I call it, is so fresh, so refreshing, and super healthy.

The fun thing about this recipe is you can absolutely put your own spin on it. Use whatever seafood you can find fresh, and mix up the citrus! The classic recipes uses lime juice, but try adding in some lemon or even fresh squeezed orange juice. You can’t go wrong with ceviche! Just have fun with it :)


INGREDIENTS:

  • 8 oz. filet - Fresh fish, skinless (Sea bass or snapper are my person favorites, but salmon, halibut, tuna, or almost any fresh fish works!)

  • 4 oz - Raw Shrimp, peeled/deveined/thawed

  • 1/2 cup (or more) - Fresh Lime Juice (or a 50/50 mix of lime and lemon)

  • 1 - Large Ripe Tomato, seeded and diced

  • 1/4 - Red Onion, finely diced

  • 1 to 2 TBSP - Jalepeno, very finely diced (seeded) - The amount depends on your desired spice level

  • 1/8 tsp - Fine Sea Salt

  • 2 TBSP (Packed) - Fresh Cilantro, chopped


DIRECTIONS:

  1. Prepare the fish by removing any skin (You can also ask the fish counter to do this for you at the market). Slice the fish into even cubes about 1cm x 1cm. Place the fish in a mixing bowl.

  2. Add the lime juice to the bowl and mix with the fish. Make sure there is enough juice to completely submerge the fish.

  3. Put a small pot with about 4 cups of water to boil (you don’t need to fill the pot). Once boiling, drop in the shrimp and blanch for only 30 seconds (use a timer - this will happen quickly). Note: you don’t want to fully cook the shrimp, but this step is just to clean/disinfect the shrimp, as most shrimp in the US is previously frozen. After the 30 seconds, immediately remove the shrimp and run under running cold water to stop the cooking. Once cool, chop the shrimp into cubes the same size as the fish. Add to the bowl with the citrus.

  4. Then add to the bowl the chopped onions, tomato, jalapeño, and salt. Stir well to combine, and make sure there is enough citrus juice to completely cover the ingredients. Add more lime juice if needed. Then place in the fridge and let marinate for another 15 minutes.

  5. Stir in the chopped cilantro. Taste for salt. And serve!!
