Savory Tomato Jam:
- 1 - Large Head of Brocoli (or 2x small) 
- 1/4 cup - Olive Oil 
- 1 teaspoon - Cajun Seasoning (or a seasoning of your choice! This will work with anything. Just note, if your seasoning does not have salt, also salt your brocc) 
DIRECTIONS:
- Pre-heat your oven to 475 F (250 C), making sure you have an oven rack on the upper level of the oven. Cover a cookie sheet with aluminum foil (for easy cleanup). 
- Chop broccoli into larger size florets. 
- In a large bowl, toss the broccoli with the olive oil and spices. Toss well until evenly coated. 
- Spread the broccoli evenly on the baking sheet. 
- Bake on the upper rack until the broccoli is charred on the outside. This will take between 15-20 minutes. 
- Enjoy this as a side dish with nearly any meal for the perfect Keto dinner.
