Easy Keto Cheddar “Grits”

Cheesy, creamy, and oh so indulgent…. Need I say more?



INGREDIENTS:

  • 1 head - Cauliflower, cut into small florets

  • 1 stick (8 Tbs) - Unsalted Butter

  • 1 tsp - Sea Salt

  • 1 tsp - White Pepper (black is ok too, but you will see the black speckles)

  • 3/4 cup - Heavy Cream

  • 2 cups - Finely-shredded Cheddar Cheese



DIRECTIONS:

  1. Using a food processor, finely blend up the cauliflower until very fine. You may need to do this in 2 or 3 batches, depending on the size of your processor. Set aside in a bowl.

  2. Melt the butter over medium-high heat in a pot. Once melted, add the cauliflower, and stir continuously for 1 minute to coat the cauli in butter. Add the salt and pepper, and continue stirring for two more minutes.

  3. Add the cream and cheese, and stir until the cheese has fully melted and “disappeared” in the mixture. Then, turn the heat down to medium-low, and let the grits simmer for about 4 minutes, stirring occasionally. Taste the grits as you go, until it’s the desired texture. Note, you do not want the cauliflower to completely cook to a ‘mushy’ texture. Take it off the heat when it’s “al dente”.

  4. Pull the pot off the heat, and let the grits cool down. They will thicken as they cool.

  5. Serve in bowls with an extra pat of butter (cuz its not quite rich enough yet ;p ). Saute some shrimp for shrimp and grits, or enjoy on the side of your favorite dinners. It makes a great alternative to cauliflower rice.
