It’s a complete dance of flavors: fresh and fiery ginger, bright cilantro, and tangy Dijon. And if salad greens aren’t for you, why not try this Summer Tomato Salad! Find any tomatoes you like (farmer’s markets always have the sweetest tomatoes, in my humble opinion!), toss in some thinly sliced onion, and coat it all in this delicious dressing. There is something very special about ginger and tomatoes, so make sure to try this delicious, elevated upgrade to a salad. And of course, this dressing is a catch-all, so it can even be used as a marinade or dipping sauce too. Try it drizzled on grilled fish or chicken. Make a big batch, pour it into a clean jar, and save it in the fridge for up to 10 days. Enjoy!

INGREDIENTS:

  • ÂĽ cup - Cilantro leaves, packed

  • 2 - Scallions

  • 1-inch “thumb” (15 g) - Fresh ginger, peeled

  • 1 clove - Fresh garlic

  • 3 Tbsp - Apple cider vinegar

  • ÂĽ cup - Sesame oil

  • 1 tsp - Dijon mustard

  • ÂĽ tsp -Sea salt

  • 1 tsp - Sesame seeds

Note: This recipe makes 1/4 cup of dressing, but can easily be doubled or tripled, and stored in the fridge for up to 10 days


DIRECTIONS:

(SUPER SIMPLE!)

  1. MIX & BLEND Place the cilantro, ginger, garlic, vinegar, oil, mustard, and salt in a food processor. Blend on high speed until the mixture is smooth.

  2. SERVE Spoon the mixture into a small serving bowl, stir in the sesame seeds, and drizzle on top of your favorite salad or grilled meat. You can also use this dressing as a marinade for meat, fish, or veggies.


PRO TIPS:

  • For those who appreciate a touch of heat (like me), a pinch of red pepper flakes or a drizzle of sriracha can take this dressing to the next level!

  • Super versatile, this dressing can go both ways ;). A dollop of tahini or Greek yogurt will create a luxuriously creamy texture without resorting to dairy, while also adding a subtle nuttiness, to perfectly complement the sharpness of the ginger and scallions.
