"French Onion" Meatloaf [Keto, Gluten-free, Low-Carb, Paleo]

“French Onion” Meatloaf

[ Keto | Low Carb | Paleo | Gluten-free ]

This ain’t your mama’s meatloaf! This is the juiciest meatloaf you’ll ever have!!! It’s flavorful and anything but boring. Trust me…you’ll want to make this again and again….


INGREDIENTS:

  • 2 lbs - Ground Beef or Turkey (85/15)

  • 1 - Large White Onion, chopped

  • 3 - Eggs

  • 2 packets - Onion Soup/dip Mix

  • 2 TBSP - Yellow Mustard

  • 1/4 cup + 1/4 cup (divided) - No-sugar-added Ketchup

  • 1/4 cup - Mayonnaise

  • 1/2 cup - Pork Panko (I use Pork King Good “Italian” flavor)

  • 1 tsp - Black pepper

  • 2 TBSP - Garlic Powder

  • 1 TBSP - Paprika

  • 1/4 cup - Shredded Swiss or Gruyere


DIRECTIONS:

  1. Preheat your oven to 400 degrees (F)

  2. Combine and mix all the ingredients in a bowl (except the remaining 1/4 cup of Ketchup and the shredded cheese).

  3. Pack the meatloaf into a baking dish or loaf pan. Then pour the remaining ketchup on top. Use a brush or a spoon to spread the ketchup evenly.

  4. Bake for 35-45 minutes. Use a meat thermometer to check the internal temperature. The meatloaf is done when the middle reads 160 degrees (F). You do not want to overcook it.

  5. Switch oven to BROIL. Top the meatloaf with the shredded cheese, and broil for about 2 minutes until the cheese is nice and bubbly. ENJOY!!!!
