The Best Strawberry Jam

Keto | Sugar Free

Look, I promise you this will be the best strawberry jam you’ll ever have. Period.


INGREDIENTS:

  • 1 lb - Fresh Strawberries

  • Optional: 1 jalapeño or habanero, seeded and thinly diced

  • 1 cup - Allulose sweetener**

  • 1/2 packet (about 1.5 tsp) - Unflavored gelatin powder

  • Pinch of sea salt

** Other sweeteners will work, but may cause the jam to crystalize or turn cloudy.


DIRECTIONS:

  1. Remove the stems and core of the strawberries and give them a rough chop. If using, finely dice your hot pepper - this is optional but super tasty!

  2. In a pot, add the chopped strawberries and smash them well with a potato masher or wooden spoon.

  3. Bring to a boil, and add in the sweetener, gelatin, salt, and hot pepper (if using). Mix well, and once boiling again, continue to cook on Medium-high heat for 20 minutes, stirring occasionally, making sure it doesn’t burn on the bottom.

  4. Turn off the heat, and use a ladle to skim off the foam on top. Pour into a jar and let cool in the fridge. It will last in the fridge for 7-10 days like that, or you can jar it properly to preserve it for months. Either way, slather this on everything, and you can thank me later.
